Great job at the Assault on Mt. Hood

I just want to give some quick acknowledgements to some people who ran their butts off this weekend on the Mt. Hood golf course. Let me tell you this, I’ve run a few races over my time but I’ve NEVER run up and down hills as steep and challenging as those last Saturday. Great job to the following people:

Paul Lind
Sue Worrall
Mariel Mabardy
Stacey Kelly,
And a shout out to Ernie Gardner who signed up and was going to do it but fell ill with a stomach virus. You guys killed it and I can’t wait till next year….. Hear that Ginny? Next year!!!
I’m still trying to get your sneaker mark off my back! I’ll be ready next year. More than ready! (even though during the run I was saying never again, ha!)
It was awesome watching you all burning up the hills of Mt. Hood!!! You were totally assaulting,… nah, you were KILLING those hills. Way to run it hard and strong.
Imagine what that race would’ve felt like if you weren’t as fit as you are!
I think that is a new challenge from Ginny Rowe… 🙂
I too want to give a special shout out to Ernie who was the recipient of an early Christmas miracle…
Although he fell ill on Saturday and couldn’t participate in the race, Santa brought him the gift of health just in time for his Top Chef party. I’m not sure if “fastest recovery” has any point value but we really should give him some for it…
Thanks Mariel. My head was sweating profusely while I was doing the taste tests and statistician duties. I think washing down appetizers with wine helped me rehydrate for the liquid loss out of my head.
BTW – A chocolate trifle won best dessert, while candied bacon with mustard won best starter. IDK how bacon won the overall – I know I didn’t vote for it.
Perhaps your judgment and taste buds were compromised due to the illness….if I were you, I would demand a recount.
Also, I would LOVE to get the candied bacon with mustard recipe for Christmas. I would be making it at home so that wouldn’t deduct any of my points but would you consider it a sweet, treat or baked good?

Ingredients
1 lb thick cut bacon (maple or applewood smoked preferred)
honey mustard
light brown sugar
Directions
Heat oven to 375 degrees, line rimmed cookie sheets with foil (things get very messy otherwise) and position racks in lined sheets. Cut bacon strips in half and brush one side with mustard, then pat brown sugar on both sides of bacon, place mustard side up on rack, cook 20-25 minutes (time will depend on how thick the bacon is), remove from oven and let rest on rack in sheet for a couple of minutes, not too long or it will really stick tight, remove strips with tongs to finish draining on paper towels. If you plan to store or take the appetizer and not serve immediately, lay the strips flat in plastic wrap in single layers (like prosciutto comes from the market) to prevent them from sticking together. Serve gently rewarmed or room temperature.
